I realised recently that when it comes to sauerkraut, it was probably one of the only foods where I eat LESS than the recommended serving size.

So, if you’re like me and you know it’s good for you, but you’re not a huge fan of the taste, then I promise you’ll fall in love with this recipe like I have!

This kraut-slaw (I’m claiming that name by the way) came to life one night, as I’m sure a lot of kitchen creations have in the past, by basically mixing together what I had left in the fridge.

But, what a result!

I actually get obsessed with eating this, so much so that I’ve often eaten it all before the rest of my dinner has finished cooking. It’s the perfect blend of tangy, creamy and crunch! Plus it tastes super fresh and hydrating too AND it’s good for you.

What is sauerkraut?

First of all, you may be unawares of the krauty goodness and wondering to yourself, what the heck actually IS sauerkraut? Or quite possibly, isn’t that some weird and disgusting food my grandma used to eat?!

Well yes, it probably is something she used to eat, but it’s definitely not disgusting (I promise!). Basically, sauerkraut is fermented cabbage, which originated in Europe hundreds of years ago.

What are the health benefits of sauerkraut?

If you’ve been keeping up with the current buzz around gut health (and reading the related posts I’ve been sharing on this blog), then you’ll already know that fermented foods, such as sauerkraut and also including kimchi and kombucha, are great for gut health!

The fermentation process while originally used to preserve foods without the use of fridges and other methods, helps to produce beneficial probiotics in the food which work wonders for restoring the balance of good bacteria in the gut. Once our “second brain” is well balanced and happy, this has a huge flow on effect for the rest of our bodies resulting in overall great digestive, immune system, cognitive and endocrine health.

 

Ingredients

  • Sauerkraut (most supermarkets have great ready made ones in the deli section, I just used a plain flavour)
  • ½ carrot
  • 2 radishes
  • ⅓ cucumber
  • Tomatoes
  • 2 spring onions
  • 2 tsp golden soya mayonnaise
  • 1 tsp french dressing

To make

  1. Simply, chop all of the fresh ingredients…
  2. Throw into a bowl with the dressing, including some of the “juice” from the kraut…
  3. Mix & enjoy!
