Spicy Sriracha Shakshuka Baked Eggs receipe

Everybody loves Sundays; for most people Sunday is the perfect day to slow down and enjoy life properly. One of my favourite weekend traditions is going out for brunch or taking the time to cook and enjoy breakfast properly at home. Shakshuka or baked eggs is one of my favourite brunch options when I go out (as well as the standard smashed avo of course), so I decided to try making at home and it was actually super simple!

Ingredients

  • garlic
  • 1/2 brown onion
  • 1/3 red capsicum
  • smoked paprika\
  • cumin
  • Himalayan pink salt
  • 1/2 can tinned tomatoes
  • sriracha
  • 2 eggs (obviously)
  • greek yoghurt – to serve
  • corainder – to serve
  • pita bread (optional) – to serve

To make:

  1. Heat olive oil in pan and add finely chopped garlic. Preheat oven to 180 degrees
  2. Next, add in the onions and capsicums and cook until soft, adding in spices halfway through
  3. Add in tinned tomatoes and sriracha, then reducing to let the sauce simmer
  4. Gently crack the eggs and add into the mixture
  5. Place the pan into the oven (you will need an oven proof skillet obviously)
  6. When almost cooked, toast pita bread to serve
  7. When the eggs are cooked, take the pan out of the oven and simply serve straight from the skillet. (but a word of warning: DON’T forget that the pan handle has been in the oven as I did….not fun)
  8. Add a dollop of natural greek yoghurt and coriander to serve – then enjoy!
