One major perk of having more flexible time at the moment is the ability to prep some meals, but then cook from home and make what I feel like. I seem to be obsessed with protein pancakes at the moment when I go out for brunch, and so I was looking to make a healthier version from home. I’ve played around with different recipes in the past, and always like changing it up. The first time I tried to make this version I found that the batter wasn’t right for pancakes (I ended up with sweet scrambled eggs….still delicious though), and so decided to try the next time basically as an omelette – success!

Ingredients:

  • 2 eggs
  • 1 scoop vanilla protein
  • squeeze lemon
  • 2 tbsp almond milk (or whichever milk you prefer)
  • 2 tsp honey
  • berries
  • 1 tbsp almond butter
  • 1 tsp maca (optional)

Method:

  1. In a mixing bowl, whisk together eggs, protein powder, milk, squeeze lemon juice and 1sp honey
  2. Add into pan, oiled with coconut oil (or your choice of oil) on med-high heat and cover with lid to cook the top quicker too
  3. In a microwave proof bowl, add the berries and other 1 tsp honey, microwaving for 2 mins
  4. When the batter is mixed through remove the omelette from the plan, top with berries and fold
  5. To finish add almond butter and a spinkle of maca
  6. Enjoy!
