Salad for breakfast?! Yes! This prawn, rocket, avocado and grapefruit salad is both a delicious, nutritious AND quick and easy way to start the day!

Benefits of protein and fats for breakfast

My first meal is generally always protein and fats, for a couple of reasons. Starting your day with protein and fats is really the ideal way to prime your body for the whole day ahead. We’ve been sleeping and fasting all night, so having an intake of protein and fats helps to control blood sugar, providing longer last last energy and focus, and helping to reduce cravings. The opposite, a high carb breakfast, can spike blood sugar levels, level us hangry and irritable once we crash.

It also works well for me as I try to keep my higher carb meals around training times for energy, and at night to help my body sleep better.

 

Of course, you can enjoy this salad at any time of day, but it worked out well for breakfast as it was super easy to prepare, and there was no cooking or re-heating required!

???? Rocket

I’m trying to eat more bitter foods, such as rocket, as they’re great for digestion (so ideal for first thing in the morning too!)

???? Prawns

A great source of lean protein, and these precooked ones are ideal time savers! Plus, they’re delicious! Apart from protein, they’re packed full of nutrients such as magnesium, zinc, selenium, iodine, niacin and potassium.

???? Avocado

One of my breakfast staples as they’re high in fat, and a great combo with most meat!

???? Ruby grapefruit

Another one of my breakfast staples you’ll often see in my meal preps. Grapefruit is another bitter with a range of health benefits, including helping to lower insulin and can also help to lower triglycerides (cholesterol). Nutrition wise, they’re packed full of natural goodies such as antioxidants, vitamin C, lycopene, beta-carotene, I also just love the taste! Tip: it tastes so much better when it’s been pre-cut and stored in the fridge!. Note- grapefruits can interfere with some medications, such as those which lower blood pressure and cholesterol, so it’s always best to check first.
