This quick and easy cajun chicken recipe one of my favourite go-to’s, I think I’ve been making for over 10 years! Simple and tasty – it definitely ticks all of the boxes!

Ingredients:
  • 500g chicken breast
  • Olive oil
  • Β½ cup flour (I used coconut flour this time, but corn flour and plain flour also work well)
  • Cajun seasoning
  • Turmeric
  • Cayenne pepper, just a dash
  • Salt & pepper, to taste
To make
  1. Preheat your oven to about 180 degrees, and line a couple of baking trays with grease proof paper
  2. First, dice the chicken. Remember, the smaller the pieces the less cooking time and vice versa. The key with chicken breast and this recipe is to make sure you don’t overcook it!
  3. Put the oil in one bowl, then add the diced chicken to coat it
  4. In another bowl mix the flour and spices to taste. You’ll need a generous amount of Cajun seasoning. To test how spicy it is you can try a bit, if there’s no flavour at all add more and if it’s too spicy – you’ll know!
  5. Next, add the chicken to the mix to season and make sure each piece is coated well
  6. Put the chicken to the trays ready to bake, making sure they’re spread out well
  7. Bake for around 20 minutes, depending on your oven temp and the size of the chicken pieces. Once it’s looking a nice golden colour, and not a floury white still, then it should be ready
  8. Enjoy!

It’s perfect for lunch or dinner, and goes well with so many sides. Pair with chips for a tasty treat meal dinner, or I also love for lunch as part of my meal prep with wilted spinach. It made the addition to my current meal prep this week too, with mashed garlic sweet potato and broccoli as my pre-training meal!
