Protein Bread Co Carrot Cake Recipe

A juicy, delicious and sweet carrot cake recipe that is also higher in protein and low in carbs? Yes please!

This carrot cake mix is from The Protein Bread Co and along with their pancake mix is one of my favourites from the range. They use lupin flour as a base, which makes it low carb, high in protein and also taste like REAL food (if you’ve tried lots of “protein” versions, you’ll know what I mean by this)!

This mix is also dairy free and plant based and vegan friendly (aside from the cream cheese icing used)! It’s best paired with Anna’s Low Carb Kitchen Icing Mix (also available on their site), for a true treat (which you don’t have to feel guilty about)! It’s also SUPER simple to make!

Ingredients (including for the icing):

  • 3 medium carrots, grated (approx. 300g)
  • 3 large eggs
  • 1/3 cup milk of choice (80ml) – I use almond milk
  • 2/3 cup coconut oil (160ml)
  • 1/2 cup chopped walnuts (60g)
  • 1 pack The Protein Bread Co Carrot Cake Mix
  • β…“ cup Anna’s Low Carb Icing Mix (75g)
  • Β½ tub cream cheese (125g)
  • 2 tbsp butter (40g)
  • 1 tsp water (10ml) or liquid – I like to use lemon juice instead for an extra zesty, fresh taste!

To make:

  1. Preheat your oven to 160Β°C and line a small loaf tin (9cm x 20cm) with baking paper, I also like to spray with coconut oil
  2. Next, mix the whole carrot cake mix packet into the bowl and add in grated carrots and walnuts
  3. In a separate bowl, whisk together the eggs, milk and oil.
  4. Pour the wet mix into the dry mix and gently fold until just combined.
  5. Once it’s just mixed, spoon the mixture into the loaf tin and pop in the oven
  6. Bake for around 70 minutes, checking with a skewer to see if it’s fully cooked and ready. Once it’s done, pop it out and place on a cooling rack for at least two hours

For the icing:

  1. To make the icing, put the butter and cream cheese in the microwave for around 30 seconds to help it soften.
  2. Then, mix in with the icing mix and water/lemon juice, using an electric mixer until it’s light and fluffy.
  3. Once the cake has cooled you can then ice it and enjoy!
